roast carrots ‘n’ kefir miso peanut dressing

What’s better than roast vegetables…. roast vegetables with a drool-worthy probiotic kefir peanut miso dressing. Not only does it give your gut some lovin’, it also tastes amazing in cooking! See below for the recipe…



Alrighty, you’ll need…
1 large bunch of heirloom carrots
1 tablespoon olive oil
1 tablespoon dried tarragon
3 tablespoons The Collective Natural Kefir
2 tablespoons peanut butter
1 tablespoon miso paste
1 tablespoon honey
1 tablespoon apple cider vinegar
2 tablespoons pistachios, roughly chopped
2 tablespoons parsley, roughly chopped
Salt and pepper

Now you just need to…
1. Pre-heat oven to 180°C. Trim and wash a bunch of heirloom carrots and pop on a roasting tray.
2. Drizzle with olive oil and sprinkle over with tarragon. Give the tray few shakes and roast in a 180°C oven for 20 minutes.
3. To make the dressing, in a bowl, whisk together The Collective Natural Kefir, peanut butter, miso paste, honey, and apple cider vinegar until smooth.
4. Serve carrots on a platter, season with salt and pepper. Drizzle over the roasted carrots and scatter 2 tablespoons each of chopped pistachios and chopped parsley.
