Super easy, and super dreamy, these muffins are made using our Vanilla Bean Greek yoghurt.
Alrighty, you’ll need…
- 1 ½ cups almond meal
- ⅓ cup coconut flour
- ¼ cup cornstarch
- ⅛ cup rice flour
- ½ tsp xanthan gum
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ⅔ cup sugar of choice
- 1 egg + 1 egg white
- ⅛ tsp cream of tartar
- ½ cup The Collective Greek Yoghurt – Vanilla
- ¼ cup milk
- 1 ½ tsp vanilla essence
- 1 tsp apple cider vinegar
Vanilla Honey Drizzle
- ½ cup The Collective Greek Yoghurt – Vanilla
- 2 tbsp honey
Now you just need to…
- Preheat oven to 180°C. Lightly grease a 6-hole Texas muffin tin.
- In a large bowl, combine all dry ingredients. Cream sugar, egg and cream of tartar for 5 minutes until thickened and creamy. Add to the dry ingredients along with the yoghurt, milk, vanilla essence and vinegar. Mix only to combine.
- Divide batter among muffin holes and bake for 15 minutes, or until lightly browned and springy to the touch. Allow to cool for 10 minutes before gently turning out onto a cooling rack.
- To make the drizzle, whisk yoghurt and honey together to combine. Drizzle over the cooled muffins.
